Emphases and Course Requirements
Emphases
The MS Program in Nutritional Science offers four emphases:
- Nutritional Science
- Latino Health and Nutrition
- Food Science
- Internship Program in Nutrition and Dietetics (last class accepted in Fall 2023; no longer accepting applicants)
These emphases provide an opportunity for students to:
- Specialize in nutritional therapy/community nutrition (Nutritional Science emphasis), Latino Health and Nutrition, or food science or complete the Internship Program in Nutrition and Dietetics (IPND).
- Increase competence in food and nutrition subject matter in preparation for college teaching, research, graduate study beyond a master's degree and administrative positions in public and private agencies.
Completion of a minimum of 36 units, while maintaining a GPA of 3.0 or above.
Take all of the following core courses (18 units)
- EDP 519 or HSC 503 or statistics course approved by the faculty advisor. (3)
- NUTR 530A Carbohydrates, Lipids and Proteins (3)
Prerequisites: NUTR 436, 436L, BIOL 260 or equivalent statistics course. - NUTR 530B Vitamins and Minerals (3)
Prerequisites: NUTR 436, 436L, BIOL 260 or equivalent statistics course. - NUTR 531 Advanced Community Nutrition (3)
Prerequisites: NUTR 436, NUTR 335, NUTR 461 - NUTR 696 Research Methods (3)
Prerequisite: Upper-division course in statistics. - NUTR 697 Directed Research (3)
Prerequisite: Advancement to candidacy.
Take one of the following capstone courses (3 units):
- NUTR 692 Directed Project (3)
Prerequisite: NUTR 697 - NUTR 698 Thesis (3)
Prerequisite: NUTR 697
An oral presentation of the thesis or directed project is required for degree completion. See the Graduate Student Handbook for additional guidance.
Complete one of the following emphases (15 units):
1. Select 5 courses for the Nutritional Science emphasis.
